A commercial grease line does not fail the way a house drain fails. There is no slow decline you can ignore for a season. Loading is continuous, the pipe never dries out, and the line runs close to capacity most of the time, so the gap between fine and flooded is narrow and it closes fast.
The cost of getting it wrong is not a plumbing bill. It is a closed kitchen during service, a health inspection you did not want, and in a shared strip mall line, a backup that comes up in the unit next door and turns into someone else's insurance claim.
Residential jetting optimises for pressure. Commercial grease work optimises for flow. The job is not to cut a hole through a plug, it is to melt and carry an enormous volume of emulsified fat down a six-inch line without it cooling and re-depositing thirty feet later. That needs water moving at a rate a small trailer jetter cannot sustain.
It also needs the right sequence. Jetting a grease main from the wrong end packs material against the downstream restriction instead of moving it to the sewer. On a line shared between four tenancies that is how one unit's cleaning becomes another unit's backup.
A grease interceptor slows the problem down. It does not eliminate it, because emulsified fat carried in hot water passes through an undersized or overdue interceptor without separating out. It then cools in the line downstream and behaves exactly as if the interceptor were not there.
We camera the run between the kitchen and the interceptor, and the run from the interceptor out to the main. If your pumping schedule is wrong for the volume you are doing, that shows up as loading in the downstream pipe, and no amount of jetting frequency fixes a sizing problem. You will get told that rather than sold a shorter interval.

That is the default rather than a favour. Nearly all our commercial work runs before opening or after close. For a kitchen that means early morning or late night, and it is priced into contract rates rather than added as an out-of-hours surcharge every time.
Usually one of three things: the interceptor is undersized for your current volume, the water leaving the kitchen is hot enough that fat stays emulsified straight through it, or the blockage is upstream of the interceptor entirely. Camera footage separates those quickly, and two of the three are not solved by jetting more often.
